Creamy Vegan Garlic Dressing

Ingredients
  

  • 1/2 cup olive oil
  • 1 cup vegan mayo We use Just Mayo or Veganaise
  • 2.5 TBSP lemon juice Or juice of one large lemon, optional: also add zest
  • 4 tsp dijon mustard
  • 2 TBSP vinegar We prefer white wine vinegar but red or apple cider works too
  • 4 cloves garlic, toasted and pressed or minced
  • 1 TBSP pickle juice An off beat ingredient but think of it like vinegar, that because that is mostly what it is. It also adds great flavor!
  • salt and pepper to taste

Method
 

  1. 1. Whisk all ingredients together until creamy and smooth.
Variations
  1. For a thicker dressing, add more mayo. You may need to add a little more vinegar to taste.
    Add juice of two limes in place of lemon.
    Add green olive juice, caper juice, or pickled pepper juice in place of pickle juice.
  2. Will keep in airtight container, in the fridge for 4-5 days.
