the incredible edible…gelatin egg substitute

For my last food storage experiment from the Essentials of Home Production and Storage booklet I decided to try the egg substitute for baking.

I was pretty skeptical so I decided to try an easy, cheap recipe…that way if it didn’t turn out I wouldn’t be as sad. 馃檪

I chose cake mix cookie bars:

1 box of cake mix
2 eggs
1/2 c. oil
{add a couple TBSP of flour if at a high altitude like me}

Mix all together and spoon into cookies on cookie sheet or into an 8×8 greased pan. If baking cookies bake at 350 degrees for 9-10 min. If baking bars bake at 350 degrees for about 20 minutes.

For the egg substitute: combine 1 tsp. of gelatin {about 1/4-1/3 of those small packets of gelatin in those 60 cent boxes at Walmart}, 3 TBSP. cold water and 2 TBSP. plus 1 tsp. boiling water. This will replace one egg in a recipe.

Verdict. Not bad. I could tell a very slight difference but I don’t know if it was because I knew there was one. Nice to know I can use this in a pinch or in an emergency.

    oh man, those look really good.
    and I've never heard of this gelatin substitute recipe. I'll have to try it out one of these days.
