Pumpkin Soup

Before I start dragging out the Christmas decor and thinking peppermint instead of pumpkin, I thought I would share this really easy recipe with you.

I found this recipe from allrecipes. It was one of the first ones on the search list and had great ratings. Even still…I couldn’t help being a little apprehensive about how it would fare with my husband and kids. I had 5 pumpkins sitting on my ghetto oven ready to be used so I pressed on anyway…

and boy am I glad! Oh my…it was delicious! My five year old didn’t love it but my two year old and my husband downed it.

Really…you have to try it. It says to use fresh pumpkin. I think 1-2 fresh pumpkins should give you plenty of pulp. We are making it again tonight to have with dinner.

    This looks delicious! I just had pumpkin soup for the first time this year. Do you think canned pumpkin would work in place of the cubed fresh?
