Soup of the Day: Cream of Wild Rice Soup

You know those people who are more humble than their talent deserves? 
That’s Anna from Noodlehead for me.
 
She’s one of the kindest, most sincere people and the depth of her talent seems endless. She is most known for her impeccable sewing, beautiful patterns, and her simply lovely photography. But she’s also a mighty great cook. Just one of the reasons I like following her on instagram is because I can count on some super yummy pics of what she’s making for dinner. 
 
Today she’s making a yummy soup for us. Take it away Anna…

yum yum.  eat it up.

This is my favorite soup to make this time of year.  I love it when it gets a little chilly outside so we can cuddle in our house and eat warm yummy soup.  Plus, my kids pretty much like any kind of soup, so I can’t go wrong cooking up some deliciousness.

Cream of Wild Rice Soup:
1 small onion, chopped
bunch of carrots, sliced
cooked chicken (optional) chicken thighs taste best!
8 c. chicken broth
2 + cups cooked wild rice (the more the merrier I say)
1/2 cup flour
1/2 cup butter
1 cup cream

Directions:
In a large pot, saute onions and carrots in the melted butter.  Gradually add flour so that it forms a thicker paste.  Add in broth gradually while stirring.  Add cooked chicken & cooked rice.  Let it come to a slow boil.  Turn heat down to low, add cream.  Let simmer and serve!  Makes enough for at least a couple meals!

    That looks so good!

    If you don't have cooked wild rice, you can make it in a crockpot ahead of time and then freeze it. My SIL has a friend that harvests the wild "rice", so I get some as a gift. It takes sooooo long to cook it! I just stick it in a crockpot all at once and let it go. Then I freeze it in about 2 cup portions, so I can pull it out for things like this.

    Yum! This is one of our favorite soups. Sometimes we add ham or turkey instead of chicken and some potatoes. Beautiful pictures!

    Mmm, I’ve only had wild rice soup at a Subway, and even that was pretty good, so I’d really like to try this. It looks so delicious!

    I finally got around to making this today… it was delicious! I added a little sprinkle of garlic powder, and left out the cream because I was out of it. SO happy that it was something I could actually eat!
    PS: It's even better with a sprinkle of Craisins on top. =)
