We've had a little heat wave the past couple days, so I thought I nice cold drink was in order.
A nice cold Almond Joy drink. Mmmm.
I took our favorite Almond Joy Hot Chocolate recipe that I shared here.
And iced it up.
The original recipe calls for almond milk and coconut milk. This time I substituted the almond milk with regular milk and a little bit of almond extract to save money. Verdict? Deee-lish. It tastes even more like the real candy bar but...I honestly still prefer the almond milk because it provides more subtle flavor. The benefit of using the almond extract version though, is that I can afford to make it a little more often! :)
Here's the recipe for the iced version if you want to give it a shot:
Iced Almond Joy
2 c. coconut milk
2 c. cow's milk + 1/8 tsp. almond extract OR 2 c. almond milk
1/3 c. semi-sweet chocolate chips
1/4 c. sugar (or less, depending on how sweet you prefer it)
* Combine 1/2 c. of one of the milks, chocolate chips, and sugar in a medium sized pan on medium heat. Stir until melted and well combined.
* Take off heat and let it cool. Refrigerate until chilled.
* Add the remaining milk. Blend or vigorously whisk together.
For an iced chocolate simply use 4 c. cow's milk.
You could also add some vanilla extract.
Or try melting some peanut butter with the chocolate in the first step. Yum!
