Soup of the Day: Butternut Squash Soup

Hi there! I'm posting this late because I fell suddenly very ill! (sorry Kirstin! thanks for being so patient and caring)

I am super excited to have Kirstin from Kojo-designs here today! She and her sister Jordan are some of the warmest, loveliest bloggers in blog land. I love co-hosting Color Your Summer with them each year. Their blog is a fantastic place for parties, pretty sewing and craft projects, and friendship. Every time I read their blog I leave feeling positive and inspired. Their blog is such a happy place to be!

Today, Kirstin is sharing a yummy Fall soup! Here's Kirstin...

Hey delia creates friends! I'm Kirstin, half of the sister team that blogs over at kojodesigns, and I'm so excited to be here today. Not only do we adore Delia, we think this series is the perfect series for November. Sheer brilliance!

Without further ado, here's our Butternut Squash Soup recipe-

Butternut Squash Soup
(seriously, my favorite soup- modified from this recipe)

1 1/2 pounds butternut squash
1/2 large onion, chopped
1 clove garlic
1 t olive oil
1 t fresh rosemary
pinch salt, pinch pepper
3 cups chicken broth


 Peel and cube the butternut squash.

Saute garlic and onion in the olive oil for a few minutes.


Add squash, rosemary, broth, salt and pepper. Bring to a boil.

Reduce heat, cover, simmer 20 minutes.

Puree half of the soup in a food processor or with a hand blender.

  Serve with a sprig of rosemary and some yummy bread- delicious! Keep warm, friends!

mmm...Isn't this perfect timing for all the storms coming this weekend!? And oh my, what beautiful photography. I love how simple and sweet this recipe is. I have some butternut squash that I plan on using to make this soup this weekend (when I get better that is).

Try adding a splash of balsamic vinegar when you serve it. So yummy
