Late Thanksgiving Baked Apple Pie

Our Thanksgiving holiday was nice and fun.

We left town to visit my family.

I think my brother looks like an older version of Reid in this picture.

We did a lot of playing

and my kids got spoiled.

We played and visited so much (and slept not so much) that I was too wiped to make my assigned apple pie while we were there. Don’t worry. No one suffered for lack of dessert. 馃檪 My mom is an excellent cook and never leaves anyone the least bit deprived.

When we got home, I finally got around to my apple pie assignment. Instead of making traditional apple pie though, I thought it would be fun to make this baked apple, apple pie version. I pinned it here. We used smaller apples but it proved to be the perfect serving size.

Tip: A grapefruit spoon came in handy when scooping out the apple cups.

I used Dana’s no fail pie crust and I’m hooked! I don’t think I will look for another pie crust recipe again. Really…It’s so fast and easy to use! The baked apples only used one dough round with some leftover, so we have three more dough rounds in the freezer for next time!

Although, I won’t completely neglect my oil pie crust. It goes the best with my favorite banana cream pie because it’s a bit saltier.

I also think that this way of making apple pie is a new favorite. It’s a bit healthier and sooo much easier. Really. It looks fancier but it’s simpler. There are fewer ingredients and comes together quick (like 20-30 minutes of prep and I had Reid “helping”me). Plus, it’s fun to eat things fun sized. The boys enjoyed getting their own personal miniature pie.

So, we didn’t get to have our apple pie around the thanksgiving table but having it by Christmas tree light was 聽a good trade off.

Speaking of. We actually have our Christmas stuff up! I didn’t plan it that way. We found a superb deal on a 7 ft. tall Frasier on Friday which set off a chain reaction of spontaneous decorating all weekend. Most of our decor is the same, but there are a few new ideas sprinkled in here and there. I’m excited to share them with you tomorrow!

    I keep seeing this pin, but I haven't tried it yet, because it always seemed like the outer apple shell would get soft and start sagging before the insides are soft enough… but now I really want to try it. =)
    Your little apple pies look delicious, and I have a bunch of pie crust in the fridge leftover from making mini pot pies… I just need the right kind of apples. =)

    My Hadley who's about Natalie's age has that same picnic basket toy and she loves it! I was going to try that apple pie recipe also but changed at the last minute and made a skillet pie instead. It was awesome, so I still need to try this one…
