EASY Strawberry Banana Pancakes

This morning we had some…

Heart Shaped.

I just took some pancake batter and added some strawberry syrup, like the kind you use for ice cream.

I melted some coconut oil in the pan on medium heat. Coconut oil doesn’t burn too quickly, browns the pancakes beautifully, and adds a nice flavor.

Then I added the batter inside our metal heart shaped cookie cutter with a couple of slices of banana.

I let the batter sit in the cookie cutter until it was almost ready to flip, before lifting it off. Then I flipped it like a normal pancake.

Be aware that the cookie cutter does get pretty messy and clumped up…I just made sure to clean it often.

Also note: I have made these before with a regular white flour pancake mix and it worked great. This morning I tried it with our multi-grain pancake recipe and it did not hold together well for the cookie cutter. So I modified our white flour recipe by adding wheat flour and it worked better.

I stacked these beauties up, added some pancake syrup, a heart shaped butter pat (using a smaller heart cookie cutter), and some more strawberry syrup.

Then of course mixed up some strawberry milk…

…and breakfast was made.

As I was eating these…I thought how delicious these would be with a real homemade strawberry syrup. Next time for sure!

Eating banana pancakes reminds me of that Jack Johnson song.

“Maybe we can sleep in. I’ll make you banana pancakes…pretend like it’s the weekend.”

I guess it is the weekend now! Have a great one.
