Cranberry Pancake Syrup and Creamy Yogurt Pancakes

I bought a bag of cranberries over Christmas, thinking I would dip them in chocolate or something yummy like that.

By New Year’s Eve, I hadn’t done anything with them and they were starting to get old. When I have strawberries that are starting to go bad, I chop them up and put them in sugar to make them last a couple of days longer.
The sugar preserves it and changes it’s consistency. Sugared strawberries, if left to sit overnight, release their juices and make a GREAT pancake syrup. I thought, well why not make cranberry syrup!?
I knew I had to do more to it than add sugar, so I hopped online to see if I could find a good recipe.
I stumbled on this one here from Smitten Kitchen.
The only changes I made are, I didn’t cut the cranberries first, I left them whole. I also reserved the leftover smashed cranberries and used it as a pancake topping. Delish!
I think it would be yummy to mix the cranberry pulp straight into the batter too.
Of course I used this syrup on my own Creamy Yogurt Pancakes recipe. This is hands down my favorite way to make pancakes. It’s delicious and it’s good for you!
**One important tip to keep in mind when making the Yogurt Pancakes: Do not keep re-greasing the pan. I spray it down once with spray oil and my first batch is a little white looking. After that, the crispy golden brown color can be achieved. If you spray the pan again, you’ll get another batch of pale pancakes.
After I took pictures, I decided to really drizzle it on and let my pancakes swim in it. I love how it’s full of flavor, yet not too sweet. It’s an all purpose syrup too. I bet you could add it to a Cremosa or just a clear soda.
I also think this would be perfect for Christmas morning next year, yes? Or maybe even Valentine’s day?

    I read a thing on CNN last week (?) about how officials in Newtown are asking people to stop sending stuff. They know we all care and hurt for them, but they don't have enough people to sort through the piles of donations. They said they were very overwhelmed with stuff.

    Mm, those pancakes look super good. =) My husband doesn't really like cranberries, but I think I would love this sauce
