UN-Peanut Butter Frosting – Allergy Friendly!

I would be lying if I said I didn’t miss peanut butter. Since discovering my daughter has a peanut allergy (+dairy and egg allergies), we avoid it for her safety.

SUNBUTTER FROSTING (24 OF 32)The day we discovered that we could substitute our beloved peanut butter with sunbutter was a blessed, happy day I tell ya! Sunbutter is made the same way peanut butter is, but from sunflower seeds; and despite how weird that sounds at first, it is REALLY yummy! It’s also way more expensive…but…really yummy! 馃槈

SUNBUTTER FROSTING (32 OF 32)Technically we could use almond butter, since聽she hasn’t reacted to small baked in amounts yet, but while she is young and still hyper sensitive to forming new allergies… Sunbutter it is!

It’s also the key ingredient to my {UN} Peanut Butter Frosting.聽SUNBUTTER FROSTING (11 OF 32) - title

Oh sorry. I was just licking the screen and remembering how yummo this was when I made it. Seriously! This stuff is SO good!

Here’s the recipe…

Allergy Friendly – Un-Peanut Butter Frosting

(peanut and dairy free)

Ingredients:

1/2 cup dairy free margarine, chilled (we use Earth Balance)
1/4 c. shortening, chilled (we use Crisco sticks)
1/4 c. Sunbutter, chilled (has to be refrigerated anyway)
2 TBSP. dairy free milk (We use Silk 80 calorie Coconut Milk)
1 1/2 c. powdered sugar聽
聽

Blend margarine, shortening and Sunbutter together with electric mixer until combined. Add milk and powdered sugar in 1/2 cup increments. Adjust amount of powdered sugar if needed to achieve a聽frosting that is light and fluffy, yet stiff enough to hold up on a cake. Mix until combined and then whip on high for about 2-3 minutes to get maximum fluffiness.

Makes enough to frost a dozen cupcakes, two dozen mini cupcakes, or a sheet cake. Double or triple the recipe for a layer cake.

Frosting can be kept at room temperature, but it keeps better and for longer when refrigerated.

SUNBUTTER FROSTING (14 OF 32)

If you choose to pipe on your frosting, it should frost almost 1 1/2 dozen cupcakes. That is…if you tend to pipe generously like me. 馃槈

Speaking of mini cupcakes. I made mine using the Milk Allergy Mom’s recipe found HERE. I have used it a bazillion times and I love it!

I pipe using a large Wilton tip and a gallon zip lock freezer bag snipped at the corner. No fancy pants methods up in here. 馃槈

Then, I throw a little sprinkles party for the cupcakes…because聽a cupcake isn’t a聽cupcake until it has sprinkles, according to my kids.

Mm. mmmm. A super delicious un-peanut buttery party for your mouth that makes you not miss peanut butter anymore! Well..mostly. 馃槈

    Um. Thank you!! Two of my kids have peanut allergies and it has been so tough for my husband to adjust to life without PB….and I’ll admit, it’s been hard for me too. 馃檪 Anyway, it’ll be so nice to have a peanut free frosting to try out for the next b.day party–these look delish!

    My daughter has had the exact same allergies since she was 6 months and she is nearly 7 now. I have only met 1 other child with this trio. I will try your recipe for sure. She eats this type of sunflower seed butter from Trader Joes for lunch at school most days. :-).

    Did you know you can make sunbutter by putting sunflower seeds in a blender? I think it’s cheaper that way.

      Yes! I used to make peanut butter that way sometimes. My blender is not very nice so it turns out really chunky ;). It also doesn’t keep quite as long, but yes thank you for mentioning that. Great tip!

    Wow, Delia, we just found out my daughter has these same three food allergies + bananas, too. When she was three, we were told she had a dairy allergy. When she was 4 they said she had outgrown the dairy allergy but had a peanut allergy. She was re-tested at 5 and now has four food allergies (plus three more ‘borderline’ allergies)! They aren’t severe, in terms of symptoms like hives or shortness of breath, but they are causing her a lot of GI symptoms. So the gastroenterologist said we need to do a complete elimination diet of these four foods/food groups. We also found out our daughter has severe lactose intolerance. She was born in Ethiopia and I have reading the majority of Ethiopians are lactose intolerant, but she has almost no ability to digest it all. So for her, dairy will likely be a thing of the past for good. Anyway, thanks so much for the recipe. Our daughter loved peanut butter, so I can’t wait to give this butter a try. She does not like almond butter at all.

    GREAT RECIPE!!! My kids love Sun Butter. We get ours from Trader Joes and it has been fairly friendly on our budget. My 1 year old has recently been diagnosed with having milk, egg, peanut, wheat, oat and tree nut allergy. My question is what did you feed your daughter when she was younger? I am having a hard time coming up with creative and healthy meals for her. We are experimenting with homemade gluten, egg and dairy free pancakes, but so far she hates them. We have only tried rice milk as a dairy substitute at this time. Any suggestions would be wonderful. I do follow a milk allergy blog (that you have mentioned before) 馃檪 thank you so much.

      Great question! My daughter is such a picky eater which makes it even harder…so I understand. We use veganese on a lot of things. I feed her lots of corn or rice pasta with dairy free butter. Other than that we emphasize meats, fruits and veggies. We feed her a lot of rice and quinoa too with olive oil in it, or dairy free butter. For sweeter fats we use coconut oil. We also still feed her Neocate (an expensive allergenic formula) at least once a day to help supplement her diet since she is so petite and her diet is limited. I hope that helps!     On amazon… you can get 10 pounds of sunbutter for less than 50 dollars. Makes it to be less or the same as peanut butter. If you buy the little containers you are paying through the nose!
